Displaying subtitles for foreign parts (Best Practice)

Content is MKV from Blu-ray and being transcoded. Subtitles work fine if switched on.

What does not work is for them to automatically display english subtitles on foreign speaking parts like the movie played originally.

Reading various posts it seems that Plex cannot do this automatically ,but there are a few databases out there where you can download the necessary .srt file for foreign speaking parts only.

Sorry for all the questions - total newbie

Q1 Can someone please tell me what is the best practice for making this work?
i.e. Does Plex do this or do I need to find a .srt file. If I need to find the file what settings do I need to make to have this automatically work?

Q2 What sites are the best to use for this?

I am using Linux Plex server 0.9.14.4, MKV 1.9.7 and the latest version of the Apple TVOS app.
Under Agents Movies Local Media Assets (Movies) is at the top.

Q3 What does this setting do?

I have set Settings > Languages
Checked Automatically select audio and subtitle tracks
Prefer audio tracks in English
Subtitle mode: Shown with foreign audio
Prefer subtitles in English

Q4 I notice on AppleTV 4 that under Audio Language is Undetermined - is this significant?
