Plex Media Server Cache Folder Consuming Large Amounts of Storage

I've been running Plex Media Server on my Ubuntu Server rig for almost a year now. A few months ago while doing some maintenance on the server I noticed that the amount of used space on the drives nearly doubled. I just now got the ambition to track down the source of the issue and after a while of poking around the file system I found that the "Transcode" folder had a folder inside called "Sync+" which if I followed it as far down as it would go I found a directory filled with 235 folders which each had *.mp4 files inside. My theory is these were all generated when I watched a video and never deleted after I finished/stopped watching the video so these have been piling up over the last several months. Is there a setting I'm missing for the maximum cache size for plex? 734G of cache seems to be a bit excessive.
